Red Russian was the first seed I ever saved en masse and it has held a special place in my garden ever since. Kale is an excellent leafy green that adds texture, colour, and nutrition to spring salad-mixes. Baby leaves are nice and tender, and excellent raw. Older leaves are a nice chopped green—we substitute kale for spinach in our lasagna recipe. Of course, kale is a first-choice fall green, as older leaves sweeten up with frost.
