2178-UT Claytonia perfoliata.

40 days.

Also known as Miner's Lettuce and Winter Purslane.

Low growing, cut-and-come-again salad green. Prized for it's cold-hardiness, will even tolerate a moderate frost. Fresh-tasting bright green leaves and stems with tiny white flowers that are edible (and never bitter!).

Direct seed and thin to 2-3".

Tolerates low fertility and part shade. Will overwinter in zones 6+, but typically grown as an annual in cooler climates and sometimes self-seeds. Native to western North America.

This article in the Washington Post explains how Claytonia got its "Miner's Lettuce" name (hint: it has to do with Miners looking for a source of Vitamin C in the winter).
