A standard in Maritime bean dishes, especially Saturday night “beans ’n’ brown bread.” Some say this bean originated with native peoples in the American Southwest; others credit it to the Passamaquoddy of Maine around 1600. The name comes from the Biblical story of Jacob and the spotted cattle, as the dark red speckles on the white bean look like the back of a spotted cow.
