Peppers & Eggplant
Most northern gardeners these days rely on plastic mulch, hoop houses ,
row tunnels or greenhouses to get a reliable crop of peppers or
eggplant. They're a finicky family to grow in the field, but it
can be done! Start your seedlings early in the late winter,
potting up as the seedlings grow. Set out into the field after
hardening off in the Spring, but make sure you avoid any potential late
frost. I've found that companion planting with onions really
increases pepper yeild.
Green peppers are just red (or other coloured) peppers that haven't
fully ripened. I learned all about ripe Jalapeno peppers this
year, as viable seed must be harvested from a fully ripe fruit - a red
Jalapeno. Well - I can handle a green Jalapeno no problem, but I
quickly realized the red ones require gloves when harvesting seed! And
once I accidentally touched the corner of my eye after brushing
my fingers over the drying tray of seeds....ouch! Sometimes we
just have to learn the hard way...

Finally a sweet pepper that ripened in the field! We used
no plastic mulch, row cover, etc. with the King, and had an abundance
of thick-walled, juicy peppers come late August. Highly
recommended as a standard for your northern kitchen garden.

That familiar little green pepper with just enough heat to suit
most tastes. Of course, if you let them go red...watch out!

HUNGARIAN HOT WAX (Hot)

These long, banana-shaped peppers start out more sweet than hot
when at their yellow stage. As they ripen to a red colour, the
heat rises but doesn't get overpowering. Nice stuffed with herbed
cheeses and roasted.
