Oh, those Spring Treats! The first salads of the season are
better than any candy I can think of...well, pretty close anyway!
Hope Seeds has increased our selection of greens again this year,
so much that Kale and Spinach now have their own pages. Find the
come-and-cut-again blends and single greens below. Get your seed
in the ground as early as soil can be
worked (many varieties have a tough time germinating in soil temp above
24 degrees C), or get a jump on the season and start plants indoors 4-6
weeks before planting out.
We're really happy to introduce a solution for those of you who long
for something green year-round: pea shoots! They're super
easy to grow, oh-so-gourmet, and chefs...well, anyone really, love
them. We've included step-by-step instructions (with pics!) for
you to download. Seed comes from our newest member to the Hope
Seeds grower network, Mark and Sally Bernard of Barnyard Organics in
Freetown, PEI.

It’s easy to have greens all year round by growing pea
shoots! Kinda like alfalfa sprouts, but these guys are grown in
trays of soil, and young growth is cut just above the soil line within
just 12-14 days of planting. Bright green colour (full o’
vitamins), crisp juicy texture, and mouthwatering fresh pea flavour
will make your yearning for Spring melt by the mid-Winter fire.

GOURMET LETTUCE MIX

A unique blend of various colours and shaped lettuces is a
beautiful addition to any meal. No brassicas in this mix for
those who have flea beetle pressure. Harvest baby leaves by
cutting 1-2" above the soil line and allow new leaves to grow for a

harvest.

This is a traditional green vegetable used in Italian cuisine.
Spring Raab has a mild mustard flavour and broccoli-like florets

BULL'S BLOOD (Baby greens, tops) Certified Organic

Blood is a great choice for those who want to diversify their selection
of spring greens with a little splash of deep, burgundy red. Now
our restaurant clients are asking for this guy by name! We
planted Bull’s Blood late fall in our high tunnel and were amazed
at the most vibrant, deep-maroon shiny leaves that tasted so sweet on a
cold November’s eve. Old heritage variety from about 1840,
when beets were more commonly referred to as "blood
turnips".
