Cabbage
No homestead garden is complete without cabbage! A versatile
vegetable that can be part of the summer diet (early varieties) or see
you through those rooty winter months when there's not much for a leaf
around (storage varieties). They can be
direct seeded in the garden as soon as soil can be worked, although I
generally start my plants indoors 4-6 weeks before planting out.
They can take a bit of frost, so you don't have to wait as long
to transplant as you do with squash, tomatoes or peppers. Flea
beetles love them, taking little "pepper-shot" bites out of leaves and
flying away really quick. Those "lovely" little white cabbage
moths start showing up in June, laying eggs which hatch grubby
cabbage-worms (green caterpillars that leave their green frass tucked
in cabbage nooks and crannies). Protect your plants from critters
by using floating
row cover.

prefer red anyway, but Red Express got me quick! This little guy
headed up early in the season and brought us to market with great
colour, 3-5 lb heads that customers loved. Better flavour for
slaws and salads, and when planted in close quarters makes cute
6” mini-heads.

EARLY JERSEY WAKEFIELD (Early/summer)

transplant. The first pointy-headed character to grace Hope
Seeds' gardens and catalogue! Originating in England in early
1800's, though became popular on this continent with market and home
gardeners when introduced by Peter Henderson in 1868. Heads are a
tight, conical 2-3 lbs that form with little outside foliage allowing
for tighter spacing.

GOLDEN ACRE (Early/summer)

transplant. An early, green round cabbage that heads up quickly
on short stems, and with a medium-sized core. Sweet, tender
hearts make flavour a winner. Definitely a summer-slaw variety as
open-pollinated Golden Acre doesn't wait till fall.

DANISH BALLHEAD (Late/storage)
100 days from
transplant. Introduced by Burpee in 1887, and that same year
awarded $10 prize was awarded to John Nogle of Plymouth, Ohio for
growing a head weighing 15 lb! Average size is 5-7 lb, heading up
in late summer and holding strong as a reliable winter storage variety
that's hard to beat.

firm up later in the season add excellent colour to coleslaw!

45 days. This bok-choi type of cabbage is becoming more
familiar in our cooking. Thick juicy white stalks with dark
green leaves form a fairly tight but upright head. Excellent in
stirfries and other Asian dishes. Limited quantity.
