Kale is becoming quite popular in Canadian kitchens these days, thanks to a hearty introduction through the salad mix boom. It's all well and fine to use this leafy vegetable as a baby green, but don't hesitate to let it grow and develop larger leaves to eat in soups or stews or baked as kale chips. Kale is gaining a reputation as a "super-food" and it's also fairly easy to grow - it's nutritious, super cold-hardy (I've shovelled snow off of the kale patch to grab some leaves with supper!), and very low maintenance. Flavour sweetens with fall frosts.
